Chocolate Oatmeal Cookies

I had a mad chocolate craving earlier today, so Ad swung into action (probably to ensure his own personal safety) and whipped up some yummy cookies. He was inspired by a recipe that he found online, but he cut it in half and changed some ingredients around since we didn’t have everything that the recipe called for.  Here’s his version!

Chocolate Oatmeal Cookies

In a large bowl, mix the following ingredients:

1 egg, beaten

1/2 cup butter, softened to room temperature

1 cup brown sugar

Dash of cinnamon

1/2 tablespoon vanilla

1/3 cup Cocoa powder

Once above ingredients are combined, add the following:

1/2 teaspoon salt

1/2 teaspoon baking soda

1 cup flour

1/2 cup oatmeal

Stir until combined. Place spoonfuls of dough on a greased baking sheet, and bake for 10 minutes at 375 degrees. Makes 16 delicious cookies! They have a slightly crunchy layer on the outside, followed by light cakey goodness on the inside. I’m not usually a fan of cake like cookies, but there’s something about these that tastes so right. Could it be the 1/3 cup of cocoa powder?
